Baking with Grandkids

Sabrina and Mathieu are anxious to bake with Granny again.

They are wearing their new aprons Mommie bought at Ikea and they also have on hairnets.
Today we are baking Banana Muffins.

Sabrina starts mixing the dry ingredients. Mathieu is mixing in the flour
Sabrina is filling the muffin cups.

This is a tedious job.

Oops. Some on my fingers....

We used the large and mini muffin tins...

Banana Muffins


1 cup white flour
1/2 cut whole wheat flour
1 tsp baking soda
1 tsp. baking powder
1/2 tsp. salt
3/4 tsp. cinnamon

3 ripe bananas mashed
1/2 cup white sugar
1 tsp. vanilla
1 egg lightly beaten
1/3 cup melted butter

In a bowl combine flour, baking soda, baking powder, cinnamon and salt.
In another bowl, combine bananas, white sugar, vanilla, egg and melted butter,
add all at once to dry ingredients. Do not over mix.

Bake at 375 degrees for 18-20 mins. Test with a toothpick in the middle.

The secret of good muffins is to stir the batter until the flour is just dampened.
The batter should be lumpy. Over mixing causes tunnels and a tough texture.
Perfect muffins are light and tender with rough shiny golden crusts.
